According to the official website of the capital's food industry, the season of fresh Kamchatka crab has begun in the markets “Moscow – on the Wave”.

Each part has its own flavor: the meat is more appreciated for its dense texture and sweetness, the shoulder is succulent, the segments are salty, soft and tender. The smallest part, kolentse, is considered a gourmet snack and is appreciated for its delicate meat fibers. From one crab you can prepare a lot of dishes: bruschetta, soup, salad, pasta or risotto. Part more often served separately, the shoulders are used for rolls and the knuckles are perfect for making salads,” the report said.
